Ingredients
- 3 tbsp unsalted butter (browned)
- 4 tbsp brown sugar (packed)
- 1 tbsp granulated sugar
- 1 egg yolk
- 0.25 tsp vanilla extract
- 6 tbsp all purpose flour
- 0.125 tsp baking soda
- 0.25 tsp salt
- 3 tbsp chocolate chips (high quality semi-sweet or dark chocolate recommended)

Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.

Brown the butter over medium heat, stirring constantly until the butter begins to foam and turns a golden brown, emitting a nutty aroma.

Take the butter off the heat and allow to cool.

In a small mixing bowl, combine the cooled browned butter, brown sugar, and granulated sugar and mix well.

Add the egg yolk and vanilla extract and mix until smooth and homogenous.

Add the flour, salt, and baking soda. Mix until just combined and no streaks of flour remain.

Fold in the chocolate chips. Do not over mix.

Shape the dough into 2 large cookies or 4 smaller cookies and place them on your prepared cookie sheet.

Bake until the edges are just golden brown and the centers have puffed up but are still gooey, about 11 minutes.

Notes
For the best results, use high-quality chocolate disks or chunks rather than store-brand chips. Be careful not to over-mix the dough once the flour is added to avoid a tough texture. If in doubt, under-bake slightly as the cookies will continue to set as they cool.
