Cinnamon Baked Doughnuts
Light and fluffy baked doughnuts infused with warm nutmeg and cinnamon, then dipped in melted butter and coated in cinnamon sugar.

Ingredients
- Baking spray with flour (such as Baker's Joy)
- 2 cup all-purpose flour
- 1.5 cup sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 0.5 tsp kosher salt
- 1 extra-large egg (lightly beaten)
- 1.25 cup whole milk
- 2 tbsp unsalted butter (melted)
- 2 tsp pure vanilla extract
- 8 tbsp unsalted butter (1 stick)
- 0.5 cup sugar
- 0.5 tsp ground cinnamon

Preheat the oven to 350 degrees F.

Spray 2 doughnut pans well with baking spray.

Into a large bowl, sift together the flour, 1 1/2 cups sugar, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.

In a small bowl, whisk together the egg, milk, 2 tablespoons melted butter, and vanilla.

Stir the wet mixture into the dry ingredients until just combined.

Spoon the batter into the baking pans, filling each one a little more than three-quarters full.

Bake for 17 minutes, until a toothpick comes out clean.

Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.

For the topping, melt the 8 tablespoons (1 stick) of butter in an 8-inch saute pan.

Combine the remaining 1/2 cup sugar and 1/2 teaspoon cinnamon in a small bowl.

Dip each doughnut first in the melted butter and then in the cinnamon sugar, either on one side or both sides.
