- 1.5 lb large shrimp (peeled and deveined)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 5 garlic cloves (minced)
- 1 tsp Italian seasoning
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1.5 cup cherry tomatoes (halved)
- 3 cup fresh baby spinach
- 1 cup heavy cream
- 0.5 cup Parmesan cheese (freshly grated)
- 0.5 cup chicken broth
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley (chopped)
Steps
- 1
Heat the olive oil and butter in a large skillet over medium-high heat.
- 2
Season the shrimp with salt, black pepper, smoked paprika, and Italian seasoning.
- 3
Cook the shrimp for 1–2 minutes per side until just pink.
- 4
Transfer the shrimp to a plate.
- 5
In the same skillet, add the garlic and cook for about 30 seconds, stirring constantly until fragrant.
- 6
Add the cherry tomatoes and cook for 3–4 minutes, stirring occasionally, until they begin to soften and release their juices.
- 7
Pour in the chicken broth and heavy cream.
- 8
Stir in the Parmesan cheese.
- 9
Simmer for 3–5 minutes, stirring often, until the sauce is smooth and slightly thickened.
- 10
Add the spinach and cook for 2 minutes, just until wilted.
- 11
Stir in the lemon juice for a touch of brightness.
- 12
Return the shrimp and any juices to the skillet.
- 13
Gently toss everything together and cook for 2–3 minutes, just until the shrimp are heated through and coated in the creamy sauce.
- 14
Sprinkle with fresh parsley and serve immediately over pasta, rice, mashed potatoes, or with warm crusty bread to soak up every bit of the delicious sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently over low heat, adding a splash of cream or broth if needed to loosen the sauce.
