Ingredients
- 0.5 cup Greek or vanilla yogurt (you can substitute with another 1/2 cup of cashews)
- 0.5 cup Cashews (previously soaked for 30-60 minutes in warm water)
- 0.5 cup Almond milk (or any milk of your choice)
- 3 tbsp Sweetener (honey, coconut sugar, or Monkfruit)
- 1 tsp Vanilla extract
- Salt (a pinch)
- 1 Mango (medium)

Soak the cashews in warm water for 30 minutes to 1 hour to ensure a creamy texture.

Place the yogurt, mango, sweetener, drained cashews, milk, vanilla, and pinch of salt in the blender.

Blend all ingredients until the mixture is smooth and homogeneous.

Pour the mixture into popsicle molds.

Place in the freezer for a minimum of 3 hours or until completely firm.
Notes
Do not skip the cashew soaking step, as this is what provides the characteristic creaminess to the popsicle without the need for heavy dairy.
