Red Wine, Burnt Onion & Slow Cooked Beef with Creamy Parmesan Butter Beans

Ingredients
- 2 lb grass-fed beef chuck or brisket (cut into large chunks)
- 6 shallots or onions (halved; used for the 'burnt onion' base)
- 3 potatoes (large, chopped into chunks)
- 3 carrots (chopped into thick rounds)
- 1 cup red wine (dry red wine like Cabernet or Merlot)
- 3 cup beef bone broth (rich in glycine for nervous system support)
- 3 sprig fresh rosemary (whole sprigs for braising)
- 2 can butter beans (15 oz cans, drained and rinsed)
- 0.5 cup parmesan cheese (freshly grated)
- 2 tbsp butter (for the creamy beans)
- 2 tbsp olive oil (for searing)

Preheat your oven to 300°F (150°C).

In a large oven-proof Dutch oven, heat olive oil over medium-high heat. Add the halved shallots or onions cut-side down and cook without moving until they are deeply charred and 'burnt' on the bottom. Remove and set aside.

Season the beef chunks generously with salt and pepper. In the same pot, sear the beef in batches until browned on all sides. Remove the beef and set aside.

Deglaze the pot by pouring in the red wine, scraping up all the browned bits (fond) from the bottom. Let the wine simmer for 2 minutes.

Return the beef and charred onions to the pot. Add the chopped potatoes, carrots, and rosemary sprigs.

Pour in the beef bone broth until the ingredients are mostly submerged. Bring to a light simmer on the stove.

Cover the pot with a tight-fitting lid and transfer to the oven. Slow cook for 4 hours, or until the beef is completely tender and falling apart.

Near the end of the cooking time, prepare the beans. In a saucepan, warm the butter beans with a splash of broth or water, butter, and the grated parmesan. Stir until creamy and well-combined.

Serve the slow-cooked beef and vegetables over a generous scoop of the creamy parmesan butter beans, ensuring you get plenty of the red wine sauce.
Notes
