Ingredients

  • 1 cup full-fat canned coconut milk (for ice cream layer)
  • 0.33 cup natural peanut butter (for ice cream layer)
  • 0.25 cup raw honey or pure maple syrup (for ice cream layer)
  • 1 tsp pure vanilla extract
  • 0.25 tsp salt (use 1/8 tsp if using salted peanut butter)
  • 0.5 cup natural peanut butter (for caramel layer)
  • 2 tbsp raw honey or pure maple syrup (for caramel layer)
  • 0.125 tsp salt (for caramel layer)
  • 3 tbsp full-fat canned coconut milk (for caramel layer)
  • peanuts (handful, for topping)
  • 9 oz dark or semi-sweet chocolate (dairy-free and refined sugar-free recommended)
  • 1 tbsp coconut oil (optional, for smoother coating)

Steps

    Add all ice cream layer ingredients (1 cup coconut milk, 1/3 cup peanut butter, 1/4 cup honey/syrup, 1 tsp vanilla, and 1/4 tsp salt) to a high-speed blender.

    Blend until the mixture is completely smooth and creamy.

    Line a standard loaf pan with parchment paper and pour the ice cream mixture into it.

    Place the loaf pan in the freezer for several hours until the layer is firm.

    In a medium bowl, mix together the peanut butter caramel ingredients (1/2 cup peanut butter, 2 tbsp honey/syrup, 1/8 tsp salt, and 3 tbsp coconut milk) until smooth.

    Spread the caramel mixture evenly over the frozen ice cream layer.

    Sprinkle a handful of peanuts on top of the caramel and gently press them in.

    Return the pan to the freezer for a few more hours until the entire slab is fully frozen.

    Once fully frozen, melt the 9 oz of chocolate. If using, stir in 1 tbsp of coconut oil to create a smoother, thinner coating.

    Remove the loaf pan from the freezer and lift the parchment paper to transfer the ice cream slab to a cutting board.

    Slice the slab into bars.

    Dip or coat each bar in the melted chocolate, then place them on a tray lined with parchment paper.

    Freeze the coated bars again until the chocolate has fully hardened.

    Before serving, let the bars sit at room temperature for a few minutes to achieve the creamiest texture.
