Ingredients

  • 1.5 lb chicken thighs or breasts (thighs or breasts)
  • 0.333 cup olive oil (for marinade)
  • 3 garlic cloves (minced)
  • 1.5 tbsp lemon juice
  • 0.333 cup parsley (chopped)

  • 1.5 lb baby potatoes (cut into small pieces)

  • 0.5 tsp paprika (for potatoes)
  • 0.5 tsp garlic powder
  • 0.5 tsp oregano (for potatoes)

  • tzatziki (optional topping)

Steps

    In a bowl, mix together the olive oil, minced garlic, lemon juice, chopped parsley, oregano, cumin, coriander, paprika, salt, and black pepper to create the chicken marinade.

    Add the chicken thighs or breasts to the bowl and coat well with the marinade.

    Allow the chicken to marinate for at least 30 minutes, or up to overnight in the refrigerator for better flavor.

    Preheat your oven to 400°F (200°C).

    In a baking dish, toss the cut baby potatoes with 2 tablespoons of olive oil, salt, black pepper, paprika, garlic powder, and oregano until evenly coated.

    Place the marinated chicken on top of the potatoes in the baking dish and pour any remaining marinade over the top.

    Cover the dish (with foil or a lid) and bake for 50–55 minutes.

    Uncover the dish and continue to bake for another 15–20 minutes until the chicken is golden and the potatoes are tender.
