- 1.5 lb baby potatoes (cut into small pieces)
- 2 tbsp olive oil (for potatoes)
- 1 tsp salt (for potatoes)
- 0.25 tsp black pepper (for potatoes)
- 0.5 tsp paprika (for potatoes)
- 0.5 tsp garlic powder
- 0.5 tsp oregano (for potatoes)
- Feta cheese (optional topping)
- parsley (optional topping)
- lemon wedges (optional topping)
- tzatziki (optional topping)
Steps
- 1
In a bowl, mix together the olive oil, minced garlic, lemon juice, chopped parsley, oregano, cumin, coriander, paprika, salt, and black pepper to create the chicken marinade.
- 2
Add the chicken thighs or breasts to the bowl and coat well with the marinade.
- 3
Allow the chicken to marinate for at least 30 minutes, or up to overnight in the refrigerator for better flavor.
- 4
Preheat your oven to 400°F (200°C).
- 5
In a baking dish, toss the cut baby potatoes with 2 tablespoons of olive oil, salt, black pepper, paprika, garlic powder, and oregano until evenly coated.
- 6
Place the marinated chicken on top of the potatoes in the baking dish and pour any remaining marinade over the top.
- 7
Cover the dish (with foil or a lid) and bake for 50–55 minutes.
- 8
Uncover the dish and continue to bake for another 15–20 minutes until the chicken is golden and the potatoes are tender.
- 9
Optional: Broil for 2–3 minutes at the end for extra color and crispiness.
- 10
Top with feta, fresh parsley, a squeeze of lemon juice, and dollops of tzatziki. Serve with warm pita bread or a simple salad.
Notes
For best results, marinate the chicken overnight. Serve with warm pita bread or a fresh Greek salad.
