Ingredients

  • Fettuccine (Quantity not specified)
  • Skirt steak (Cut into strips; quantity not specified)
  • Bacon (Diced; reserve some for finishing. Quantity not specified)
  • 1 Onion
  • 2 dentes Garlic (Minced)
  • Tomato paste (Quantity not specified)
  • Heavy cream (Quantity not specified)
  • Parmesan cheese (A generous amount, for finishing; quantity not specified)
  • Salt (To taste)
  • Black pepper (To taste)
  • Pasta cooking water (A little, to deglaze the pan and form the sauce)
  • Vodka (Alternative to the pasta cooking water; one shot)

Steps

  1. 1

Cut the skirt steak into strips and the bacon into small dice.

  2. 2

Heat a skillet and fry the bacon until nicely browned and crisp. Remove and set aside for later.

  3. 3

In the same very hot skillet, sear the skirt steak strips in batches to prevent them from releasing water. Season with salt and black pepper, and brown well. Remove and set aside.

  4. 4

While preparing the meat, cook the fettuccine for one minute less than the time indicated on the package. Reserve some of the cooking water.

  5. 5

In the skillet used for the meat, sauté the onion and garlic until well browned.

  6. 6

Add a little pasta cooking water or one shot of vodka, and scrape the bottom of the skillet to loosen the browned bits.

  7. 7

Add the tomato paste and stir.

  8. 8

Add a little more pasta cooking water to form the sauce.

  9. 9

Add the skirt steak, some of the reserved bacon, and the heavy cream; stir to incorporate into the sauce.

  10. 10

Add the cooked fettuccine and toss the pasta in the sauce.

  11. 11

Finish with plenty of Parmesan cheese and the reserved bacon pieces. Serve immediately.
