Beef Strips with Cheese Cream and Potatoes

Ingredients
- 1 kg top sirloin (cut into strips)
- soy sauce (to taste)
- smoked paprika (to taste)
- black pepper (to taste)
- salt (to taste)
- olive oil (for searing and sautéing)
- 1 onion (chopped, divided)
- 3 clove garlic (minced, divided)
- 0.5 cup tomato sauce (approximate amount for sauce)
- 1 tbsp cornstarch (dissolved in a little water)
- 6 potatoes (cut into large rustic pieces)
- smoked paprika (for potatoes)
- fine herbs (to taste)
- 2 clove grated garlic (for potatoes)
- 2 box heavy cream (approx. 200g each)
- 2 tbsp requeijão (Brazilian cream cheese)
- 200 g mozzarella cheese (shredded or chopped)
- parsley (chopped for garnish)

Cut 1 kg of top sirloin beef into thin strips.

Season the beef strips with soy sauce, smoked paprika, black pepper, salt, and a drizzle of olive oil.

In a very hot pan, sear the meat in small batches until golden brown. Remove from the pan and set aside.

In the same pan, sauté some chopped onion and minced garlic until fragrant.

Add a bit of tomato sauce to the pan and return the seared meat to the mixture.

To give the sauce a glossy finish and thickness, add 1 tbsp of cornstarch dissolved in a little water. Stir until thickened, then set the meat aside.

Prepare the potatoes by cutting 6 potatoes into large rustic pieces. Season them with smoked paprika, salt, black pepper, grated garlic, olive oil, and fine herbs.

Place the potatoes in an air fryer at 200°C (400°F) for 20 minutes until crispy and golden.

To make the cheese cream, sauté more garlic and onion in a clean pan or the wiped-out meat pan.

Add 2 boxes of heavy cream, 2 tbsp of requeijão, and a pinch of salt. Mix well.

Stir in 200g of mozzarella cheese until melted and the cream is smooth and stretchy.

To assemble, pour the cheese cream onto a serving platter. Top with the beef strips and their sauce.

Garnish with a pinch of fresh chopped parsley and arrange the rustic potatoes around the edges of the dish.
Notes
If you don't have an air fryer, you can bake the potatoes in a preheated oven at 200°C until golden, though it may take longer (30-40 minutes).
