Ingredients

  • 2.5 lb beef chuck roast (2-3 lb range provided)
  • 0.5 cup bone broth (plus more if sauce is dry)
  • 1 cup mini potatoes (sliced in half; mini gold potatoes recommended)
  • 0.333 cup tamari
  • 2 tbsp miso paste
  • 2 tbsp honey
  • 2 tbsp rice wine vinegar
  • 5 garlic (minced)
  • 3 tbsp fresh grated ginger (size of your thumb)
  • red pepper flakes (pinch)
  • 5 Persian cucumbers (sliced)
  • 5 mini bell peppers (sliced)
  • 3 tbsp tamari or coconut aminos (for salad)
  • 1 tsp hot honey (for salad)
  • 1 tbsp rice wine vinegar (for salad)
  • sriracha (to taste)
  • sesame seeds (for topping)
  • green onions (sliced, for garnish)
  • everything bagel seasoning (for garnish)

Steps

    Preheat your oven to 325°F (165°C).

    In a small bowl, combine the tamari, miso paste, honey, rice wine vinegar, minced garlic, grated ginger, and red pepper flakes to create the marinade.

    Place the beef chuck roast in a container or bowl. Pour the marinade over the roast and toss until it is evenly coated. You can cook it immediately or let it marinate in the fridge ahead of time.

    Transfer the beef and all of the marinade into a roasting dish or Dutch oven.

    Cover the dish tightly with a lid or foil and roast in the oven for 3 hours total.

    When there is about 45 minutes of cooking time remaining, remove the dish from the oven. Add the sliced mini gold potatoes and the 1/2 cup of bone broth. Cover and return to the oven.

    After the 3 hours are up, check the meat for tenderness. It should pull apart easily with a fork. Shred the beef into large chunks and toss them back into the cooking juices. If it is not tender yet, cover and cook for an additional 20-30 minutes.

    If the sauce seems too dry after shredding, add a little more bone broth to reach your desired consistency.

    While the beef finishes, prepare the salad by combining the sliced Persian cucumbers, sliced mini bell peppers, tamari (or coconut aminos), hot honey, and rice wine vinegar. Add sriracha to taste and top with sesame seeds.

    Garnish the shredded beef with sliced green onions and everything bagel seasoning before serving.

Notes

The author suggests serving this over rice, in lettuce wraps, or using leftovers for shredded beef tacos. If you prefer a sweeter profile, one commenter suggested adding 1/2 cup of sweet chili sauce at the end to balance the salt.
