Ingredients

  • 1 Shortcrust pastry (About 30 cm)
  • 2 Yellow onions (Thinly sliced)
  • 2 c. à soupe Olive oil
  • Salt (A good pinch for the onions, then adjust for the potatoes)
  • 2 Potatoes (Large, thinly sliced. Optional parboiling: 10 minutes in salted boiling water)
  • 45 g Unsalted butter (Melted)
  • 2 c. à soupe Fresh thyme (Finely chopped)
  • Pepper (Adjust to taste)
  • 100 g Cheddar (Grated)
  • 1 Egg (Beaten for brushing)

Steps

  1. 1

    Thinly slice the yellow onions.

  2. 2

Heat the olive oil in a heavy-based saucepan. Add the onions and a good pinch of salt, then cover and cook over medium heat for 3 minutes.

  3. 3

Stir the onions, cover again and continue cooking for 3 minutes.

  4. 4

Remove the lid and cook the onions for 10 to 15 minutes, until golden and caramelized while remaining tender. Set them aside.

  5. 5

Thinly slice the potatoes. To help them cook more quickly in the oven and become tender, you can parboil them for 10 minutes in salted boiling water.

  6. 6

In a large bowl, combine the potatoes with three-quarters of the reserved caramelized onions, the melted butter, thyme, salt and pepper.

  7. 7

Roll out the shortcrust pastry on a sheet of parchment paper.

  8. 8

Place half of the potato mixture in the center of the pastry, leaving a 3 cm border.

  9. 9

Sprinkle half of the grated cheddar over the potatoes.

  10. 10

Add the remaining potatoes, followed by the remaining cheddar. Finish with the remaining caramelized onions.

  11. 11

Fold the edges of the pastry over the filling and brush them with the beaten egg.

  12. 12

Place the tart, still on its parchment paper, on a baking sheet and bake for 45 minutes at 180 °C.

  13. 13

Once the tart is baked, cut it into slices and serve with a salad.

Notes

Parboiling the potatoes is optional. The recipe mentions serving with a salad but does not specify a quantity. Estimated total time includes 10 minutes of optional parboiling for the potatoes.
