- carrots (Roughly chopped.)
- celery (Roughly chopped.)
- onion (Roughly chopped.)
- 3 clove garlic
- butter (Used in the broth and again with the cooked pastina; amount not specified.)
- chicken bouillon (Amount not specified.)
- bay leaves (Remove before blending.)
- pastina (Cook according to the shortest time stated on the package.)
- 1 eggs (Use 1 to 2 eggs.)
- fresh Parmesan cheese (Mixed into the egg mixture and used as a topping; amount not specified.)
- lemon (Squeeze into the blended broth.)

Steps
- 1
Add approximately 6 cups of chicken broth, or bone broth, and 2 cups of water to a large pot. Bring the liquid to a boil.
- 2
While the broth comes to a boil, roughly chop the carrots, celery, and onion.
- 3
Add the chopped carrots, celery, onion, garlic, butter, chicken bouillon, and bay leaves to the boiling broth.
- 4
Cover the pot and simmer the broth and vegetables for about 45 minutes, until the vegetables are very soft.
- 5
While the broth simmers, cook the pastina according to the shortest cooking time on the package.
- 6
While the pastina cooks, place 1 to 2 eggs and some fresh Parmesan in a bowl. Whisk until combined.
- 7
Add butter and the whisked egg mixture to the cooked pastina. Stir until the egg mixture is fully cooked.
- 8
Uncover the broth and remove the bay leaves.
- 9
Use an immersion blender to blend the softened vegetables into the broth.
- 10
Squeeze lemon juice into the blended broth.
- 11
Serve a large scoop of the prepared pastina covered with the blended broth. Top with fresh Parmesan and black pepper.
Notes
The source does not specify quantities for the vegetables, butter, chicken bouillon, bay leaves, pastina, Parmesan, lemon, or pepper. It also does not specify the pastina package cooking time; use the shortest time printed on the package. Remove all bay leaves before using the immersion blender.
