Spicy Butter Garlic Prawns

- 500 g Prawns (cleaned and deveined)
- 2 tbsp Butter (unsalted or salted)
- 2 tbsp Garlic (finely minced)
- 3 Green chilies (slit or chopped)
- 1 tsp Red chili flakes
- 0.5 tsp Black pepper powder
- Salt (to taste)
- 1 tbsp Fresh coriander (finely chopped for garnish)
- 1 tsp Lemon juice (optional finishing touch)

Clean and devein the prawns thoroughly. Pat them dry with a paper towel to ensure they sear properly.

Heat a pan over medium heat and add the butter. Once the butter melts and begins to foam, add the finely minced garlic.

Sauté the garlic for about 1 minute until it becomes fragrant and turns a light golden color, being careful not to burn it.

Add the slit green chilies and red chili flakes to the pan. Stir for 30 seconds to infuse the butter with spice.

Increase the heat slightly and add the prawns to the pan. Spread them out in a single layer.

Season with salt and black pepper powder. Cook the prawns for 2-3 minutes on each side until they turn pink and opaque.

Once the prawns are cooked through, toss them well to ensure they are thoroughly coated in the spicy garlic butter sauce.

Garnish with freshly chopped coriander and a squeeze of lemon juice if desired. Serve hot.
Notes
Do not overcook the prawns as they can become rubbery; they usually only need 4-5 minutes total. This dish is traditionally served as an appetizer or with steamed rice.
