Ingredients
- 3 slices bacon
- 2.5 lb beef chuck (Cut into cubes)
- 4 tbsp all-purpose flour
- 2 tsp salt (Divided)
- 2 onions
- 4 cloves garlic
- 1 can Guinness
- 0.25 cup tomato paste
- 3 carrots
- 3 celery ribs
- 4 thyme sprigs
- 1 tsp white sugar
- 7 cracks black pepper (Cracked)
- 4 cups chicken stock (Or as needed to cover)
Steps
- 1
Add the bacon to a pot and cook until its fat renders. Remove the bacon and set it aside, leaving the rendered fat in the pot.
- 2
Cut the beef into cubes. Sprinkle it with the flour and salt, then toss to coat.
- 3
Sear the coated beef in the bacon fat. Set the browned beef aside.
- 4
Add the onions to the pot and cook for a few minutes.
- 5
Add the garlic and cook for about one minute.
- 6
Pour in the Guinness. Scrape the bottom of the pot to loosen the browned fond.
- 7
Add the tomato paste, carrots, celery, thyme, sugar, and black pepper.
- 8
Return the bacon and beef to the pot.
- 9
Pour in the chicken stock, adding enough to cover the ingredients.
- 10
Bring the stew to a boil, then reduce the heat and simmer, covered, for two hours.
- 11
Remove the lid and boil for another 30 minutes.
Notes
The transcript does not specify the can volume, the exact cuts for the vegetables, or a heat setting. The description lists 4 cups chicken stock, with more as needed to cover.
