Ingredients

  • 2 lb potatoes (peeled and cubed)
  • salt (for parboiling water)
  • 3 garlic (cloves, minced)
  • 3 tbsp cooking oil (such as vegetable or olive oil)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp lemon pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1 tsp all-purpose seasoning
  • 1 tbsp butter (optional, for finishing)

Steps

    Preheat your oven to 200°C (400°F).

    Place the cubed potatoes in a pot of water and add some salt.

    Parboil the potatoes for about 7 minutes until they are just fork tender.

    Drain the potatoes and transfer them into a roasting pan.

    In a small bowl, mix together the minced garlic, oil, Cajun seasoning, lemon pepper, paprika, dried parsley, onion powder, and all-purpose seasoning.

    Drizzle the seasoning mixture over the potatoes in the roasting pan.

    Use a silicone spatula to gently mix the potatoes with the seasoning so that you don't break the softened potatoes.

Notes

Using a silicone spatula is recommended to keep the parboiled potatoes intact while tossing. You can adjust the Cajun seasoning based on your preferred spice level.
