Ingredients

  • 1.5 cup water
  • 0.5 cup chicken bone broth
  • 1 dried anchovy + dashima soup pack (or 5 anchovies + 1 dashima)
  • 1 tsp low-sodium chicken bouillon
  • 1 tbsp gochugaru (Korean red chili flakes)
  • 0.5 tsp gochujang (optional)
  • 2 garlic cloves (minced)
  • 0.5 tsp soy sauce
  • 0.5 tsp fish sauce
  • 100 g cooked shredded chicken breast
  • 1 egg (soft boiled or poached)
  • 0.25 block silken tofu (about 75g)
  • 0.25 cup zucchini
  • 0.25 cup shredded carrot
  • 0.25 onion (thinly sliced)
  • 100 g uncooked frozen kalguksu noodles
  • scallion (for garnish)
  • black pepper (to taste)
  • sesame seeds (for garnish)
  • sesame oil or chili oil (optional topping)

Steps

    In a pot, combine 1½ cups water and ½ cup chicken bone broth with the anchovy and dashima soup pack.

    Simmer the broth for 10 minutes to extract the flavor, then remove and discard the soup pack.

    Add the chicken bouillon, minced garlic, gochugaru, gochujang (if using), soy sauce, and fish sauce to the broth. Simmer for an additional 5 minutes.

    Add the sliced zucchini, shredded carrot, and sliced onion to the broth and simmer for 2–3 minutes until the vegetables are tender.

    Stir in the 100g of cooked shredded chicken breast to heat through.

    In a separate pot of boiling water, cook the frozen kalguksu noodles until they are chewy and cooked through. Drain and rinse the noodles.

    Assemble the bowl by placing the cooked noodles at the bottom, then pouring the broth and vegetable-chicken mixture over them.

    Top the bowl with the soft boiled or poached egg, silken tofu, sliced scallions, black pepper, and sesame seeds. Drizzle with optional sesame oil or chili oil if desired.

Notes

Macros per serving: ~580 kcal, 50g Protein, 56g Carbs, 11.5g Fat. Using a soup pack is a convenient way to get traditional Korean flavor, but you can use individual dried anchovies and dashima (dried kelp) if preferred.
