Ingredients

  • 0.5 cup Old fashioned oats
  • 1.5 cup Chicken bone broth (Added gradually; use more as needed for desired consistency)
  • 3 Dried shiitake mushrooms (Hydrated in the cooking oats)
  • 2 Eggs (Soft-boiled for a jammy yolk)
  • 0.5 Yellow onion (Sliced for caramelizing)
  • 2 Garlic cloves (Whole, browned with onions)
  • 1 tsp Soy sauce (To taste)
  • 1 tbsp Miso paste (White or red miso)
  • 0.5 tsp Mushroom bouillon
  • 0.25 cup Kabocha squash (Pre-cooked, optional)
  • 0.25 cup Egg whites (Liquid egg whites for extra protein)
  • 2 Green onions (Sliced, for mixing in and garnish)

Steps

    In a small pot, combine 1/2 cup of old fashioned oats and about 1 cup of chicken bone broth. Bring to a boil.

    Add the dried shiitake mushrooms directly into the oats as they cook to allow them to hydrate.

    Continue cooking the oats, adding more bone broth as the liquid dissolves to maintain a creamy consistency.

    In a separate pot, bring water to a boil and add two eggs. Boil for approximately 6-7 minutes for a jammy yolk, then immediately transfer to an ice bath or cold water.

    In a skillet over medium heat, sauté sliced onions and whole garlic cloves until they are browned and caramelized. Add a splash of chicken broth and cover the pan to soften them further.

    Once the oats are cooked and the heat is turned off, stir in the soy sauce, miso paste, a bit of the mushroom soaking liquid from the pot, and mushroom bouillon. Mix thoroughly.

    Stir in pre-cooked kabocha squash (if using) and the liquid egg whites. Stir constantly until the egg whites are incorporated and cooked through by the residual heat.

    Fold in a handful of sliced green onions.

    Transfer the oatmeal to a bowl. Top with the caramelized onions and garlic, the hydrated shiitake mushrooms, and more fresh green onions.

Notes
