Ingredients
- 0.333 cup Stevia in the Raw or coconut sugar (Use one or the other for the cinnamon topping; the source notes that the topping is sweet enough for some.)
- 2 tsp Ground cinnamon (For the cinnamon topping)
- 1.5 cup Oat flour
- 2 scoops Vanilla protein powder (The instructions specify vanilla whey protein; scoop weights vary by brand. Estimated at about 60 g total.)
- 1 tbsp Baking powder
- 0.5 tsp Salt
- 0.25 cup Stevia in the Raw (Optional; whisk into the dry mixture if a sweeter cake is desired. The source specifies stevia for this addition, not coconut sugar.)
- 2 large Egg whites
- 1 cup Unsweetened almond milk
- 0.333 cup Unsweetened applesauce
- 0.25 cup Plain 0% Greek yogurt (The source calls this optional but says it is best.)
- Vanilla extract (A splash; optional but recommended by the source.)
- Nonstick cooking spray (For coating an 8 × 8-inch baking dish.)
Steps
- 1
Preheat the oven to 350°F (175°C). Lightly coat an 8 × 8-inch baking dish with nonstick cooking spray.
- 2
In a small bowl, combine the Stevia in the Raw or coconut sugar with the cinnamon. Set this cinnamon-sugar mixture aside.
- 3
In a large bowl, whisk together the oat flour and vanilla protein powder.
- 4
Add the baking powder and salt to the flour mixture. If using the optional additional stevia, add it now, then whisk until the dry ingredients are evenly distributed.
- 5
In a medium bowl, whisk together the egg whites, unsweetened almond milk, applesauce, Greek yogurt, and vanilla extract until smooth.
- 6
Pour the wet mixture into the large bowl with the dry ingredients. Whisk just until combined; do not overmix.
- 7
Pour about one-quarter of the batter into the prepared baking dish, spreading it into a shallow, even layer.
- 8
Sprinkle half of the reserved cinnamon-sugar mixture evenly over the batter.
- 9
Pour the remaining batter over the cinnamon-sugar layer and spread it as evenly as possible.
- 10
Sprinkle the remaining cinnamon-sugar mixture over the top. Draw a knife through the batter in swirling motions to create a marbled pattern.
- 11
Bake at 350°F (175°C) for 24–28 minutes, until the cake is set and a tester inserted in the center comes out mostly clean.
- 12
Let the cake cool in the dish for 10 minutes before slicing. The finished cake will be dense rather than light and fluffy.
Notes
The post says the recipe takes about 10 minutes to prepare and initially says 20 minutes to bake, but the detailed instructions specify baking for 24–28 minutes; the detailed time was followed. The source alternately calls the vessel a baking dish and loaf pan; use the specified 8 × 8-inch baking dish.
