Creamy Potato Salad
A classic American potato salad made with tender potatoes, hard-boiled eggs, crunchy onion and celery, and a creamy mayonnaise-mustard dressing with sweet pickle relish. It is ideal for cookouts, potlucks, holidays, and make-ahead meals.

Ingredients
- 6 medium potatoes (Scrubbed, peeled, and cut into 1-inch cubes; Yukon Gold potatoes are recommended.)
- 1 onion (Chopped; sweet onion is recommended.)
- 1 stalk celery (Chopped.)
- 4 eggs (Hard-boiled, cooled, and peeled.)
- 2 tbsp white distilled vinegar
- 1 cup mayonnaise (Used as the creamy dressing base.)
- 1 tbsp yellow mustard
- 2 tbsp sweet pickle relish (Sweet pickle relish.)
- salt (To taste.)
- 2 spring onions (Sliced; used as garnish.)
- 1 tsp paprika (Used as garnish.)
- black pepper (To taste.)

Scrub and peel the potatoes, then cut them into approximately 1-inch cubes so they cook evenly.

Place the potato cubes in a large pot and cover them completely with water.

Bring the water to a boil over medium-high heat. Boil the potatoes for approximately 10 minutes, until they are firm-tender. Test one cube with a fork; it should be tender but not falling apart.

Drain the potatoes thoroughly and set them aside to cool.

Transfer the cooled potatoes to a large mixing bowl. Chop the onion and celery, then add both to the potatoes.

Hard-boil the eggs, then cool and peel them.

Place a cooling rack over the bowl of potatoes and push the eggs through the rack openings to chop them, or chop the eggs with a knife. Add the chopped eggs to the potato mixture.

Pour the white vinegar over the potato-and-egg mixture.

In a separate bowl, mix the mayonnaise, yellow mustard, sweet pickle relish, salt, and black pepper until the dressing is evenly combined.

Fold the dressing gently into the potato mixture until the potatoes and other ingredients are evenly coated. Avoid overmixing so the potato cubes remain intact.

Garnish the salad with paprika and sliced spring onions.

Refrigerate until ready to serve.
Notes
Store covered in the refrigerator for up to 4 days. The potato salad does not freeze well. Yukon Gold potatoes, sweet onion, and sweet pickle relish are recommended; red potatoes and diced dill pickles can also be used as a variation mentioned in the comments.
