Ingredients

  • 2 packages instant noodles (flavor packets discarded)
  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp vegetarian oyster sauce (or regular oyster sauce)
  • 0.5 tsp sugar
  • 0.5 tsp sesame oil
  • white pepper (fresh ground, to taste)
  • 2 tbsp canola oil
  • 2 garlic (cloves, sliced)
  • 0.25 cup sweet red bell peppers (or Holland chilies, julienned)
  • 5 fresh shiitake mushrooms (sliced)
  • 1 carrot (medium, julienned)
  • 1.5 cups cabbage (shredded)
  • 1 tbsp Shaoxing wine
  • 1 cup snow peas (cut in half at an angle)
  • 1 cup fresh mung bean sprouts
  • 2 scallions (split and cut into 2-inch pieces)

Steps

    Open the instant ramen and discard the flavor packet.

    Bring 6 cups of water to a boil in a large pot.

    Add the noodles to the boiling water and cook for about 45 seconds to a minute, using chopsticks or a fork to stir occasionally. You want to just rehydrate the ramen until it breaks up from its rectangular form; do not cook the ramen fully in this step.

    Once the ramen is rehydrated, immediately drain the noodles in a colander and rinse under cold water to stop the cooking process and remove excess starch.

    In a small bowl, combine the soy sauce, dark soy sauce, oyster sauce, sugar, sesame oil, and white pepper. Set the sauce mixture aside.

    Heat a wok over high heat and add the canola oil and sliced garlic.

    Immediately add the bell peppers, mushrooms, carrots, and cabbage to the wok and stir-fry for 1 minute.

    Add the Shaoxing wine to the vegetables and stir-fry for another 15 seconds.

    Add the cooked noodles to the wok, pulling them apart if they have stuck together.

    Pour the prepared soy sauce mixture evenly over the noodles.

    Stir-fry for about 20 seconds using a scooping motion until the sauce is well distributed throughout the noodles and vegetables.

    Add the snow peas, mung bean sprouts, and scallions to the wok.

    Mix well for another minute until the sprouts and peas are just tender, then serve immediately.

Notes

It is critical not to overcook the ramen during the initial boiling phase, as they will continue to cook in the wok. For a non-vegetarian version, you can add meat of your choice during the initial stir-fry phase.
