Ingredients
- 2 potatoes (peeled and sliced)
- 2 tbsp butter
- 0.33 cup Parmesan cheese
- 0.75 tsp salt
- 0.5 tsp garlic powder
- 1 tsp parsley (dried)
- 2 tbsp cornstarch
- 1 egg
- Mozzarella cheese (cubed)
- Oil (for frying)
Steps
- 1
Peel and slice the 2 potatoes into uniform pieces.
- 2
Place potato slices in a pot of water and boil until tender, or until a fork can easily pierce the surface.
- 3
Drain the potatoes and mash them together with 2 tablespoons of butter until the mixture is smooth.
- 4
Add 1/3 cup Parmesan cheese, 3/4 tsp salt, 1/2 tsp garlic powder, 1 tsp parsley, 2 tablespoons cornstarch, and 1 egg to the mashed potatoes.
- 5
Mix the potato mixture thoroughly until all ingredients are well combined.
- 6
Take a small portion of the potato mix, place a mozzarella cheese cube in the center, and roll it into a ball, ensuring the cheese is fully enclosed.
- 7
Heat frying oil to 350°F (175°C).
- 8
Deep fry the potato balls in the hot oil until they are golden brown and crispy.
Notes
Ensure the oil is at the correct temperature (350°F) before frying to prevent the potato bites from becoming greasy or falling apart.
