Gooey S’mores Bars

Ingredients
- 1 egg (or flax egg)
- 0.333 cup runny tahini (or other creamy nut butter)
- 3 tbsp coconut oil (melted)
- 0.25 cup coconut sugar (up to 1/3 cup)
- 1 tsp vanilla extract
- 1 cup oat flour
- 0.5 tsp baking powder
- 0.5 cup dark chocolate chips (lots; Hu Kitchen recommended)
- 0.5 cup mini marshmallows

Preheat your oven to 350°F (175°C).

In a medium mixing bowl, whisk together the wet ingredients: egg, tahini, melted coconut oil, coconut sugar, and vanilla extract until well combined.

Mix in the dry ingredients: oat flour and baking powder. Stir until a dough forms.

Fold in a generous amount of dark chocolate chips and some mini marshmallows into the dough.

Line a square baking tray with parchment paper or grease it lightly. Flatten the dough evenly into the tray.

Top the flattened dough with additional mini marshmallows.

Bake at 350°F for 16-19 minutes until the edges are set and the marshmallows are toasted.

Allow the bars to cool slightly before slicing to ensure they set properly.
Notes
For a vegan option, use a flax egg. You can substitute tahini with almond butter or peanut butter if preferred.
