Korean Bossam with Radish Salad
Tender boiled pork belly (Bossam) served with a spicy, garlicky radish salad. A classic Korean dish traditionally enjoyed after making kimchi.

Ingredients
- 700 g Pork belly (whole piece; about 600-800g)
- 1.5 L Water
- 1 Knolle Garlic (for the broth)
- 2 Onions
- 2 Green onions (for the broth)
- 1 tbsp Peppercorns (black)
- 2 Dried chilies (optional)
- 2.5 tbsp Soybean paste (Doenjang; about 2-3 tbsp)
- 500 g Radish (Korean radish or alternatively kohlrabi)
- Salt (for pickling the radish and to taste)
- 2 tbsp Gochugaru (Korean chili flakes)
- 2 tbsp Fish sauce
- 5.5 Garlic cloves (pressed; for the salad)
- 1 tbsp Sugar (or syrup)
- 1 tbsp Balsamic vinegar
- 2 tbsp Apple cider vinegar
- Green onion (finely sliced, for the salad)
- Roasted sesame seeds (for the salad)
- Ssamjang (for dipping)
- Korean shrimp paste (Saeujeot, for dipping)

Cut the radish (or kohlrabi) into strips, ensuring they are not too thin.

Mix the radish strips with some salt and let them sit for 10-15 minutes to draw out the water.

In a large pot, bring 1.5 liters of water to a boil with the head of garlic, onions, 1-2 green onions, peppercorns, dried chilies, and the soybean paste.

Once the water is boiling, carefully place the pork belly in the pot. Reduce the heat and let the meat simmer gently for 40 minutes.

While the meat is cooking, finish the radish salad: Drain the excess water from the salted radish and squeeze well.

Season the radish with gochugaru, fish sauce, pressed garlic cloves, sugar (or syrup), balsamic vinegar, and apple cider vinegar. Mix well.

Mix the green onions and roasted sesame seeds into the salad. Season with salt to taste and set aside.

After the cooking time, remove the pot from the heat and let the pork belly rest in the broth for about 5-10 minutes.

Remove the meat from the broth and cut into thin slices.

Serve the meat together with the radish salad, ssamjang, shrimp paste, fresh lettuce for wrapping, and rice.
Notes
Traditionell wird dazu Reiswein (Makgeolli) getrunken. Wenn kein koreanischer Rettich verfügbar ist, eignet sich Kohlrabi hervorragend als Ersatz.
