Ingredients
- 8 boneless, skinless chicken thighs
- 12 oz egg noodles
- 2 tbsp olive oil (For searing the chicken)
- 2 tbsp butter (For sautéing the aromatics)
- 3 cloves garlic (Minced)
- 1 small onion (Diced)
- 1.5 cups heavy cream
- 1 cup chicken broth
- 0.75 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp paprika (Used to season the chicken)
- 1 tsp garlic powder (Used to season the chicken)
- 1 tsp salt (Used to season the chicken)
- 0.5 tsp black pepper (Used to season the chicken)
- 2 tbsp fresh parsley (Chopped, for garnish)
Steps
- 1
Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the noodles and eight chicken thighs.
- 2
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package directions until al dente. Drain well and set aside.
- 3
In a small bowl, combine the paprika, garlic powder, salt, and black pepper. Season both sides of the chicken thighs evenly with the mixture.
- 4
Heat the olive oil in a large oven-safe skillet or sauté pan over medium-high heat. Add the seasoned chicken thighs and sear until golden brown on both sides, about 3–5 minutes per side. The chicken does not need to be fully cooked at this stage. Transfer it to a plate.
- 5
Reduce the heat to medium and melt the butter in the same pan, leaving the browned bits from the chicken in the bottom.
- 6
Add the diced onion and sauté until softened and translucent, about 3–4 minutes.
- 7
Add the minced garlic and cook for about 30–60 seconds, stirring constantly, until fragrant but not browned.
- 8
Pour the chicken broth and heavy cream into the pan. Stir well, scraping up any browned bits from the bottom, and bring the mixture to a gentle simmer.
- 9
Add the grated Parmesan cheese and Italian seasoning. Stir over medium-low heat until the cheese melts and the sauce thickens slightly, about 2–4 minutes.
- 10
Spread the drained egg noodles evenly in the prepared baking dish.
- 11
Arrange the seared chicken thighs over the noodles, then pour the creamy garlic-Parmesan sauce evenly over the chicken and noodles.
- 12
Bake uncovered at 375°F (190°C) for 20–25 minutes, until the sauce is bubbling and the chicken reaches an internal temperature of 165°F (74°C) at the thickest point.
- 13
Remove the bake from the oven, garnish with the chopped parsley, and serve hot.
Notes
The chicken is seared before baking, but it must reach 165°F (74°C) before serving. Nutrition is an estimate for the full recipe and will vary with the size of the chicken thighs and the brands used.
