Ingredients

  • 2 chicken breast (sliced into bite-sized strips)
  • 1 tbsp cornstarch (for coating the chicken)
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp vegetable oil (divided)
  • 1 cup broccoli (cut into small florets)
  • 1 red bell pepper (sliced into strips)
  • 1 cup sugar snap peas
  • 1 carrots (peeled and sliced into matchsticks)
  • 2 clove garlic (minced)
  • 1 tsp ginger (freshly grated)
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 0.25 cup chicken stock
  • sesame seeds (for garnish)
  • 2 green onions (sliced, for garnish)

Steps

    In a small bowl, whisk together the soy sauce, honey, sesame oil, and chicken stock to create the stir-fry sauce. Set aside.

    Place the sliced chicken breast in a bowl and toss with cornstarch, salt, and black pepper until evenly coated.

    Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.

    Add the chicken to the wok in a single layer. Sear for 3-4 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the wok and set aside.

    Wipe out the wok if necessary and add the remaining 1 tablespoon of oil.

    Add the broccoli, red bell pepper, sugar snap peas, and carrots. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

    Add the minced garlic and grated ginger to the vegetables and cook for 30-60 seconds until highly fragrant.

    Return the cooked chicken to the wok with the vegetables.

    Pour the prepared sauce over the chicken and vegetables. Toss everything together and cook for 1-2 minutes until the sauce has thickened and glazed the ingredients.

    Remove from heat and garnish with sliced green onions and sesame seeds. Serve immediately over rice or noodles.

Notes

For best results, ensure your wok is very hot before adding ingredients. You can substitute the vegetables for whatever you have in the fridge, such as baby corn or bok choy.
