Ingredients

  • 1 avocado (ripe)
  • 0.33 cup cacao powder (unsweetened)
  • 0.33 cup maple syrup (increase to 1/2 cup for a sweeter taste)
  • 0.33 cup almond flour
  • 2 eggs (large)
  • 0.25 cup coconut oil (melted)
  • vanilla extract (a dash)
  • 1 tsp baking soda
  • 2 tsp lion's mane mushroom powder
  • walnuts (optional, chopped)
  • chocolate chips (optional)
  • 3 tbsp yogurt (heaping tablespoons; coconut yogurt recommended)
  • 0.75 scoop vanilla protein powder (0.5 to 1 scoop)

Steps

    Preheat your oven to 350°F (175°C).

    In a food processor, combine the avocado, cacao powder, maple syrup, almond flour, eggs, melted coconut oil, vanilla extract, baking soda, and lion's mane powder.

    Process the mixture until completely smooth and well combined.

    If using, fold in the optional walnuts and chocolate chips by hand.

    Transfer the batter into a prepared baking dish or individual pie molds.

    Bake for 30 minutes at 350°F.

    Remove from the oven and let the brownies cool completely at room temperature.

    Transfer the cooled brownies to the fridge for at least one hour to allow them to set and develop a dense, buttery texture.

    While the brownies chill, prepare the filling by mixing 3 heaping tablespoons of yogurt with 1/2 to 1 scoop of vanilla protein powder until smooth.

    Assemble the brownie pies by spreading the protein yogurt filling over the chilled brownies and sandwiching them or topping them as desired.

Notes

The brownies achieve their best texture after chilling in the fridge for at least an hour. They can be stored in the refrigerator.
