Honey Chipotle Chicken Quesadillas

Ingredients
- 40 oz Chicken Breast (diced into bite-sized pieces)
- 1 tbsp Garlic Salt (for chicken seasoning)
- 1 tbsp Black Pepper (for chicken seasoning)
- 7 oz Canned Chipotle Peppers (blended for marinade)
- 1 Lime Juice (freshly juiced for marinade)
- 2 tbsp Honey (for chicken glaze)
- 6 cup Fat Free Mozzarella (shredded)
- 10 g Fresh Chives (finely chopped)
- 10 Low Calorie Tortillas (standard size)
- 2 cup Cottage Cheese (0% fat, for sauce base)
- 3 tbsp Light Mayo (for sauce)
- 3 tbsp Minced Chipotle Peppers (for sauce)
- 1 Lime Juice (freshly juiced for sauce)
- 0.5 tbsp Garlic Salt (for sauce)
- 0.5 tbsp Black Pepper (for sauce)
- 2 tbsp Honey (for sauce)
- 0.5 cup Fat Free Milk (to thin the sauce)

Prepare the chicken by dicing the 40oz of chicken breast into small, even bite-sized pieces. Season thoroughly with 1 tablespoon of garlic salt and 1 tablespoon of black pepper.

In a blender or food processor, combine 7oz of canned chipotle peppers, the juice of one lime, and 2 tablespoons of honey. Blend until smooth to create the marinade.

Pour the marinade over the seasoned chicken pieces and toss to coat evenly. Heat a large non-stick skillet over medium-high heat and cook the chicken until it is fully cooked through and the sauce has reduced into a sticky glaze, approximately 8-10 minutes.

While the chicken cooks, prepare the Chipotle Sauce. In a blender, combine 2 cups of fat-free cottage cheese, 3 tablespoons of light mayo, 3 tablespoons of minced chipotles, the juice of one lime, 0.5 tablespoons of garlic salt, 0.5 tablespoons of black pepper, 2 tablespoons of honey, and 0.5 cups of fat-free milk. Blend until completely smooth and creamy.

To assemble the quesadillas, lay out a low-calorie tortilla. On one half, spread a portion of the fat-free mozzarella, followed by a scoop of the cooked honey chipotle chicken, a sprinkle of fresh chives, and a drizzle of the prepared chipotle sauce. Fold the tortilla in half.

Heat a clean skillet or griddle over medium heat. Place the assembled quesadillas in the pan and toast for 2-3 minutes per side until the tortilla is golden brown and crispy, and the mozzarella has melted.

Repeat the assembly and toasting process for all 10 quesadillas. Serve immediately or follow storage instructions for meal prep.
Notes
Freezing Instructions: Wrap the quesadillas individually in aluminum foil or place them in an airtight freezer bag. They can be kept frozen for up to 3 months. Reheating Instructions: Wrap a frozen quesadilla in a wet paper towel and microwave on a plate for 3-4 minutes. For a crispy finish, toast in a pan or air fry for a few minutes after microwaving.
