Ingredients
- 6 Bacon (pieces)
- 4 Thin chicken breast (seasoned on both sides; 3-4 pieces)
- Chicken seasoning (Fire and Smoke Chica Licka Bam Bam seasoning recommended)
- 3 Jalapeños (diced; more or less depending on heat preference)
- 2 tbsp All-purpose flour
- 2 cup Chicken broth
- 1 tsp Onion powder
- 1 tbsp Garlic (minced)
- Salt and pepper (to taste)
- 0.5 block Cream cheese (4 oz; cubed up)
- Chives (for garnish)

Place 6 pieces of bacon in a skillet over medium-high heat. Fry until crispy on both sides.

Remove the crispy bacon from the skillet and set aside on a plate, leaving the bacon drippings in the pan.

Season the thin chicken breasts on both sides with your chicken seasoning.

Cook the chicken in the bacon grease, turning at least once, until it reaches an internal temperature of 165°F (74°C).

Remove the cooked chicken from the pan and set aside, ensuring the drippings remain in the skillet.

Add the 3 diced jalapeños to the skillet and sauté for 3 to 5 minutes.

Add 2 tablespoons of flour to the jalapeños and grease. Stir to combine and cook for a few minutes to create a roux and remove the raw flour taste.

Slowly pour in 2 cups of chicken broth while whisking constantly to prevent lumps.

Add the minced garlic, onion powder, salt, and pepper. Mix well and let the sauce simmer for a few minutes until it thickens.

Turn the heat down to ensure the sauce is not boiling. Add the cubed cream cheese and stir until it is completely melted and the sauce is smooth.

Add the chicken breasts back into the pan to coat with the sauce.

Crumble the reserved bacon and spread it over the top of the chicken. Garnish with fresh chives if desired.
Notes
This dish is excellent served over mashed potatoes or rice. Adjust the number of jalapeños to control the spice level.
