Ingredients
Steps
Place 1/2 cup pistachios, 2 cups pistachio milk, 3 soaked pitted dates, a pinch of salt, and 1 teaspoon of vanilla extract into a high-speed blender.
Blend the mixture until completely smooth and well combined.
Pour the mixture into a Ninja Creami pint container, ensuring it does not exceed the max fill line.
Place the lid on the container and store in the freezer. Freeze for at least 10 hours, though overnight is recommended for the best texture.
Remove the pint from the freezer and place it into the Ninja Creami outer bowl. Set the machine to 'Lite Ice Cream' mode and let it process.
After the first spin, if the texture is crumbly, select the 'Re-spin' function to achieve a creamy consistency.
Top with additional chopped pistachios before serving.
Notes
Soaking the dates in warm water for 10-15 minutes before blending ensures they incorporate fully without leaving chunks. For the best results, ensure your freezer is set to a very cold temperature as required by Ninja Creami instructions.
