  • 3 Large cucumbers (Very green; remove the ends, ribs, and seeds, then cut into small or medium pieces.)
  • 1 cup Water
  • 0.5 cup White or brown sugar (You can use either white sugar or brown sugar.)
  • 0.5 cup White vinegar
  • 1 tsp Ground turmeric (Adds color and a characteristic earthy flavor.)
  • 1 tsp Salt
  • 1 tsp Ground black pepper (Optional.)
  • 0.5 Lemon juice (Squeeze in at the end; this is approximately the juice of half a lemon.)

    Wash and dry the cucumbers. Cut off and discard the ends. Halve them and remove the ribs and seeds to prevent the relish from becoming too watery.

    Place a large skillet over medium heat. Add the chopped cucumber, sugar, water, and white vinegar.

    Cook the mixture over medium heat for approximately 45 minutes, stirring occasionally to prevent sticking and to allow the cucumber to absorb the liquid. Continue until the liquid has reduced and the mixture reaches a thick, glossy, slightly caramelized consistency.

    Remove the skillet from the heat. Stir in the juice of half a lemon to balance the sweetness with a tart note.
