Ingredients

  • 500 g ground chicken (ground chicken)
  • 0.5 tsp cinnamon (the secret ingredient)
  • 1 tbsp kebab spices (mix of cumin, coriander, paprika, etc.)
  • 2 bell peppers (sliced for roasting)
  • 2 tbsp mayonnaise (for the sauce)
  • 2 tbsp Greek yogurt (for the sauce)
  • 1 tsp curry powder (to taste)
  • 2 tortilla wraps (durum style)
  • 50 g cheese (shredded, for melting)
  • lettuce (shredded)
  • 6 cherry tomatoes (halved)

Steps

    Preheat your oven to 400°F (200°C).

    In a large bowl, combine the ground chicken with kebab spices and a pinch of cinnamon.

    Place the seasoned chicken mixture between two sheets of parchment paper. Use a rolling pin to flatten the meat into a very thin, even layer.

    Remove the top layer of parchment paper. Place the meat (still on the bottom parchment) onto a baking sheet. Arrange sliced bell peppers on the side of the tray.

    Bake in the oven until the chicken is fully cooked and slightly browned, approximately 15-20 minutes. Once cooked, slice the thin sheet of meat into strips.

    While the meat cooks, prepare the healthy curry sauce by mixing equal parts mayonnaise and Greek yogurt with plenty of curry powder.

    Warm the tortilla wraps. Sprinkle cheese onto the warm wraps so it begins to melt.

    Assemble the kebab by layering the chicken strips, roasted peppers, fresh lettuce, and tomatoes onto the cheesy wraps.

    Drizzle with the prepared curry sauce, roll tightly, and serve.

Notes
