Ingredients

  • 0.25 cup Mayonnaise (for the dressing)
  • 1 tbsp Sriracha (or mustard as listed in description; transcript specifies sriracha)
  • 1 tsp Maple syrup
  • 1 tbsp Rice vinegar
  • 1 tsp Toasted sesame oil (for the dressing)
  • 1 tsp Fresh ginger (minced or grated)
  • 1 clove Garlic (minced)
  • 1 tbsp Soy sauce (or tamari; for the dressing)
  • 1 tsp Water (to thin dressing if needed)
  • 2 cup Cooked jasmine or sushi rice (leftover rice works best for crisping)
  • 1 tbsp Soy sauce (for the rice)
  • 1 tbsp Sesame oil (for the rice)
  • 0.5 lb Salmon (cut into bite-sized pieces)
  • 0.5 Cucumber (diced)
  • 1 Carrots (shredded or julienned)
  • 1 Avocado (diced)
  • 0.25 cup Cilantro (chopped)
  • 1 pack Seaweed snacks (crumbled or cut into strips)
  • Sesame seeds (optional, for topping)

Steps

    Preheat your oven to 400°F (200°C).

    Prepare the dressing by whisking together the mayonnaise, sriracha (or mustard), maple syrup, rice vinegar, toasted sesame oil, fresh ginger, garlic, and soy sauce in a small bowl. If the dressing is too thick, add a teaspoon of water at a time until it reaches your desired consistency.

    Place the cooked rice on a large sheet pan. Drizzle with sesame oil and soy sauce, then toss until the rice is evenly coated. Spread the rice out into an even layer.

    Place the salmon pieces on the same sheet pan (or a separate one if preferred). Brush the salmon generously with some of the prepared dressing.

    Bake in the preheated oven for 15-20 minutes, or until the rice is crispy and golden on the edges and the salmon is cooked through.

    In a large mixing bowl, combine the shredded carrots, diced cucumber, diced avocado, and chopped cilantro.

    Add the crispy rice and the cooked salmon to the bowl with the vegetables.

    Crumble the seaweed snacks over the mixture and pour the remaining dressing over the salad.

    Toss everything together gently until well combined. Serve immediately, topped with sesame seeds if desired.

Notes

The creator notes that each serving contains approximately 500 calories and 30g of protein. For best results, use day-old rice as it crisps up better in the oven.
