Crispy Honey Mustard & Pickle Chicken Bites
Crispy air-fried chicken bites coated in cornflakes and tossed in a sweet, tangy honey–pickle mustard sauce with fresh dill. The combination of crunchy chicken, honey, mustard, and pickle flavor is especially distinctive.

Ingredients
- 1 lb chicken breast (Cut into bite-sized pieces)
- 0.5 tsp ground mustard
- 0.5 tsp garlic powder
- 0.5 tsp dried dill
- 0.5 tsp salt
- 0.25 cup cornstarch (For coating the chicken)
- 1 egg (Beaten)
- 1 cup cornflakes (Crushed; breadcrumbs may be substituted)
- cooking oil spray (For spraying the air-fryer basket and chicken; amount as needed)
- honey (Use equal parts with pickle mustard)
- pickle mustard (Use equal parts with honey; French’s pickle mustard is referenced)
- fresh dill (A generous handful, freshly chopped)

Cut the chicken breast into evenly sized, bite-sized pieces so they cook at the same rate.

Season the chicken with the ground mustard, garlic powder, dried dill, and salt. Toss until the seasoning is distributed evenly.

Add the cornstarch and toss until every piece is fully coated with a thin, dry layer.

Add the beaten egg and mix until the chicken pieces are evenly covered in egg wash.

Transfer the egg-coated chicken to a bag containing the crushed cornflakes, or breadcrumbs if using them instead. Seal the bag and shake until the chicken is thoroughly and evenly crusted.

Preheat the air fryer to 360°F (180°C), if your model requires preheating. Spray the basket lightly with cooking oil.

Arrange the coated chicken in a single layer in the air-fryer basket, leaving space between pieces for the hot air to circulate. Spray the tops lightly with oil.

Air-fry at 360°F (180°C) for 12–15 minutes, turning or shaking according to your air fryer’s usual method if needed, until the coating is golden and crispy and the chicken is cooked through.

While the chicken cooks, whisk together equal parts honey and pickle mustard in a bowl. Add plenty of freshly chopped dill and whisk until combined.

Immediately transfer the hot, crispy chicken to the sauce and toss until every piece is coated. Serve right away.
Notes
The recipe is written per 1 lb of chicken breast. If using larger pieces or a crowded air-fryer basket, cook in batches so the chicken crisps instead of steaming. Check that the chicken reaches 165°F (74°C) internally before serving.
