Ingredients
- 1 kg chicken fillet (cut into small bite-sized pieces)
- 1 tsp salt
- 0.5 tsp black pepper
- paprika (to taste)
- garlic powder (to taste)
- curry powder (a small amount)
- 0.25 cup egg whites
- 0.75 cup all-purpose flour
- 0.75 cup tapioca starch (plus more if needed for coverage)
- cooking oil (for deep frying)
Steps
- 1
Place 1 kilogram of small-cut chicken fillet pieces into a large mixing bowl.
- 2
Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the chicken.
- 3
Season with paprika, garlic powder, and a small amount of curry powder to taste.
- 4
Pour in 1/4 cup of egg whites and mix thoroughly to ensure the chicken is well coated.
- 5
Add 3/4 cup of all-purpose flour and 3/4 cup of tapioca starch to the bowl.
- 6
Mix until all chicken pieces are well covered in the flour and starch mixture; you may add more tapioca starch if the coating seems insufficient.
- 7
Heat cooking oil in a pan for deep frying.
- 8
Fry the chicken pieces in batches until they are golden brown and crispy.
Notes
The use of tapioca starch helps achieve a lighter, crispier texture compared to using just flour.
