Ingredients
- 360 g large ripe bananas (Mashed finely until smooth and not lumpy; 360 g total.)
- 1.333 cup all-purpose flour
- 0.333 cup cocoa powder
- 8 tbsp salted butter (Melted.)
- 1 large egg (At room temperature.)
- 0.333 cup sour cream or Greek yogurt (At room temperature; use either sour cream or Greek yogurt.)
- 0.5 cup light brown sugar
- 0.5 cup granulated sugar
- 1 tbsp vanilla bean paste
- 1 cup semi-sweet chocolate chips (Plus more for topping.)
- 1 tsp baking soda
Steps
- 1
Preheat the oven to 350°F (175°C).
- 2
In a mixing bowl, peel the bananas and mash them finely until smooth and not lumpy.
- 3
Add the melted salted butter, light brown sugar, and granulated sugar to the mashed bananas. Mix well for 2 minutes.
- 4
Crack in the room-temperature egg and whisk for an additional 2–3 minutes.
- 5
Add the room-temperature sour cream or Greek yogurt and the vanilla bean paste. Mix well, then set the wet mixture aside.
- 6
In a separate bowl, combine the all-purpose flour, baking soda, and cocoa powder. Mix until evenly combined.
- 7
Slowly add the dry mixture to the wet batter, mixing only until incorporated.
- 8
Add the semi-sweet chocolate chips and fold them into the batter just until combined. Do not overmix the bananas at this point.
- 9
Line a loaf pan with parchment paper.
- 10
Pour the batter into the prepared loaf pan and scatter additional chocolate chips over the top.
- 11
Bake for 1 hour, or until a toothpick inserted into the bread comes out clean.
- 12
Let the banana bread cool completely before serving.
Notes
The source does not specify the loaf-pan size. Baking time is 1 hour, but check with a toothpick as directed because the time may vary with pan size and oven.
