Ingredients

  • 1 lb cooked chicken breast (shredded or finely diced)
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt (plain, non-fat or full-fat)
  • 2 tbsp Calabrian chili peppers (chopped, in oil)
  • 0.5 cup fresh basil (packed, finely chopped)
  • 0.25 cup red onion (finely diced)
  • 1 tbsp lemon juice (freshly squeezed)
  • 0.5 tsp garlic powder
  • salt (to taste)
  • black pepper (to taste)

Steps

    Prepare the chicken by shredding or finely dicing 1 lb of cooked chicken breast and place it into a large mixing bowl.

    Finely dice the red onion and chop the fresh basil and Calabrian chili peppers.

    In the bowl with the chicken, add the mayonnaise, Greek yogurt, chopped Calabrian chili peppers, fresh basil, and diced red onion.

Notes

Inspired by Carolina Gelen's Marry-Me Chicken Salad. For best results, let the salad chill in the refrigerator for 30 minutes before serving to allow the flavors to meld.
