Weights are estimates. Together, the ingredients weigh about 1.47 kg before cooking, which is about 370 g per serving.
Steps
Peel and dice the potatoes. Chop the onion and carrot.
Heat a drizzle of oil in a pot and sauté the onion and carrot.
After a few minutes, add the potatoes. Stir and let them cook briefly to absorb the flavors.
Pour in enough hot water or broth to cover the potatoes.
Add salt, black pepper, and tomato paste. Cover the pot and cook for about 20–30 minutes, until the potatoes are tender.
Mash some of the potatoes directly in the pot to release their starch and make the dish creamy.
If there is too much liquid, remove some before adding the pasta and set it aside.
Add the pasta and cook for the time stated on the package. During cooking, add some of the reserved liquid if needed to adjust the consistency.
Turn off the heat. Finish with chopped parsley, a drizzle of raw olive oil, and grated cheese; alternatively, use diced cheese for a melty version.
Serve immediately.
Notes
The amounts of water or broth, oil, salt, pepper, and parsley are not specified. Cook the pasta for the time stated on the package. The cheese can be grated or diced.
