Spicy Carrot Salad

Ingredients
- 5 Large carrots (peeled)
- 2.5 cloves Garlic (minced or crushed)
- 1 Chili pepper (large or medium, diced)
- 0.25 cup Lemon juice (freshly squeezed, approximately from 2 lemons)
- 2 tbsp Olive oil
- 1 tsp Harissa (optional)
- 1 tsp Sugar
- 1 tsp Salt
- 0.25 tsp Cumin
- Black pepper (a little)
- 1 Whole lemon (for zest and dicing)

Cut the carrots into strips (not too thin, keep them slightly thick). You can use a food processor with a julienne disc, a mandoline, a grater, or a knife. Place the carrot strips in a large bowl.

Grate the lemon zest into the bowl with the carrots.

Using a knife, remove the remaining white pith from the lemon and cut the lemon flesh into small cubes. Try to remove any seeds.

Add the lemon cubes to the carrot bowl. Add the crushed garlic, chili pepper, lemon juice, olive oil, harissa, sugar, salt, cumin, and a little black pepper.

Mix the salad well and serve.
Notes
The salad improves in flavor the next day.
