Ingredients

  • 2 Chicken breasts (boneless, skinless, sliced into thin strips)
  • 2 tbsp Olive oil (divided)
  • 2 tbsp Taco seasoning (or a mix of chili powder, cumin, garlic powder, and paprika)
  • 2 Bell peppers (assorted colors, sliced into strips)
  • 0.5 Yellow onion (sliced into strips)
  • 4 Large flour tortillas
  • 2 cup Shredded Mexican cheese blend (or Monterey Jack)
  • 1 Avocado (ripe, for dipping sauce)
  • 0.25 cup Sour cream (for dipping sauce)
  • 1 handful Cilantro (chopped, for sauce and garnish)
  • 1 Lime (juiced)

Steps

    Slice the chicken breasts into thin, even strips. Place them in a bowl and toss with 1 tablespoon of olive oil and the taco seasoning until thoroughly coated.

    Heat a large skillet or griddle over medium-high heat. Add the seasoned chicken strips and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.

    In the same skillet, add another tablespoon of oil if needed. Sauté the sliced bell peppers and onions for 4-5 minutes until they are softened and slightly charred. Remove from heat.

    To make the avocado sauce, blend the avocado, sour cream, cilantro, and lime juice in a food processor or blender until smooth. Set aside.

    Wipe the skillet clean and return to medium heat. Place a flour tortilla in the pan. Sprinkle a generous layer of shredded cheese over the entire surface.

    On one half of the tortilla, add a portion of the cooked chicken and the sautéed peppers and onions.

    Once the cheese begins to melt, fold the tortilla in half over the filling. Press down slightly with a spatula.

    Cook for 1-2 minutes per side until the tortilla is golden brown and crispy and the cheese is fully melted.

    Repeat the process for the remaining tortillas. Slice each quesadilla into wedges and serve hot with the avocado dipping sauce.

Notes

For extra flavor, you can marinate the chicken in the spices and lime juice for 30 minutes before cooking. If you prefer a spicier kick, add sliced jalapeños to the pepper and onion mix.
