Ingredients

  • 2 tomatoes (finely chopped)
  • 2 red onions (finely chopped)
  • 1 puñado fresh parsley (finely chopped)
  • 2.5 tbsp olive oil (2-3 tablespoons)
  • 1 tbsp pomegranate molasses (pomegranate syrup)
  • 0.5 tsp salt
  • 1 tbsp sumac
  • 0.5 limón lemon juice (fresh)

Steps

  1. 1

Finely chop the tomatoes, red onions, and fresh parsley.

  2. 2

Place the chopped ingredients in a large bowl.

  3. 3

Add the olive oil and pomegranate molasses to the bowl.

  4. 4

Season the mixture with salt and sumac.

  5. 5

Pour the juice of half a fresh lemon over the ingredients.

  6. 6

Mix everything very well until the ingredients are evenly combined.

  7. 7

Let the salad rest for 5 to 10 minutes before serving to allow the flavors to meld.

Notes

Secret tip: The resting time is crucial so the sumac and pomegranate molasses can hydrate the vegetables and create a delicious natural dressing. Some feedback suggests adding a pinch of hot paprika or a tablespoon of grape vinegar for a more intense variation.
