- 0.5 tsp Italian seasoning
- 1.33 cup orzo pasta
- 3 cup chicken bone broth
- 0.25 tsp salt (to taste)
- 0.25 tsp pepper (freshly ground)
- 8 oz raw tiger shrimp (peeled and deveined, or more to taste)
- spinach (handful, cut into thin strips)
- 1 lemon zest (zest of 1 lemon)
- lemon juice (to taste)
- 1 tbsp grated Parmesan cheese
Steps
- 1
Heat olive oil in a deep skillet over medium heat.
- 2
Add garlic and Italian seasoning; sauté just until fragrant, 30 to 60 seconds.
- 3
Add orzo and stir to toast lightly, about 30 seconds.
- 4
Pour in broth, add salt and pepper, and bring to a gentle boil.
- 5
Reduce heat to medium-low and simmer, stirring occasionally, until the orzo is nearly tender and most of the liquid is absorbed, 7 to 9 minutes.
- 6
Nestle shrimp into the orzo.
- 7
Scatter spinach over the top.
- 8
Add lemon zest and lemon juice.
- 9
Cover and cook shrimp just until pink and opaque, turning once, 2 to 3 minutes per side.
- 10
Turn off heat.
- 11
Stir in Parmesan cheese. Adjust seasoning to taste.
Notes
Adjust seasoning to taste at the end. You can add more shrimp if desired.
