- 1.5 tsp Dijon mustard
- 100 g white wine
- 250 g fresh Swiss brown mushrooms (sliced)
- 0.5 tsp ground black pepper (plus extra to season)
- 520 g liquid beef stock
- 250 g orecchiette pasta
- 0.5 tsp sea salt
- fresh parsley leaves (to serve)
Steps
- 1
Place Gruyère cheese into the mixing bowl and grate 10 sec/speed 9. Transfer to a bowl and set aside.
- 2
Place extra virgin olive oil and brown onions into the mixing bowl then chop 5 sec/speed 5.
- 3
Add butter and sauté 15 min/120°C/speed 1 until onions are softened and starting to caramelize.
- 4
Add fresh thyme leaves, Dijon mustard, and white wine, then sauté 5 min/Varoma/speed 1 without the measuring cup to allow the alcohol to evaporate.
- 5
Add sliced Swiss brown mushrooms, ground black pepper, liquid beef stock, orecchiette pasta, and sea salt.
- 6
Cook 12-14 min/100°C/reverse/speed soft, or until the pasta is cooked to your preference.
- 7
Stir in the reserved grated Gruyère cheese and allow it to sit for 1-2 minutes to melt into the sauce.
- 8
Serve immediately garnished with fresh parsley leaves and extra thyme.
