Ingredients

  • 1.5 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 0.5 tsp salt
  • 1 cup milk (any variety)
  • 0.5 cup pumpkin puree
  • 1 egg (large)
  • 2 tbsp melted butter (slightly cooled)
  • 1 tsp vanilla extract
  • 4 tbsp melted butter (for cinnamon swirl)
  • 0.25 cup brown sugar (packed)
  • 1 tbsp ground cinnamon
  • 0.5 cup unsalted butter (softened)
  • 2 tbsp honey
  • 0.5 tsp ground cinnamon (for butter)
  • maple syrup (for serving)

Steps

  1. 1

In a medium bowl, prepare the cinnamon swirl by whisking together 4 tablespoons of melted butter, 1/4 cup brown sugar, and 1 tablespoon of cinnamon until smooth. Transfer the mixture to a small piping bag or a plastic zip-top bag with a small corner snipped off. Set aside.

  2. 2

In a large bowl, whisk together the dry ingredients: 1 1/2 cups flour, 2 teaspoons baking powder, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon salt.

  3. 3

In a separate bowl, whisk together the wet ingredients: 1 cup milk, 1/2 cup pumpkin puree, 1 egg, 2 tablespoons melted butter, and 1 teaspoon vanilla extract.

  4. 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

  5. 5

Heat a non-stick griddle or large skillet over medium-low heat and lightly grease with butter or oil.

  6. 6

Scoop about 1/4 cup of batter onto the griddle for each pancake. Once the batter is on the heat, pipe a spiral of the cinnamon sugar mixture onto the top of each pancake.

  7. 7

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip the pancake and cook for another 1-2 minutes until golden brown and cooked through. Wipe the skillet between batches if the sugar starts to burn.

  8. 8

Prepare the whipped honey cinnamon butter by beating 1/2 cup softened butter, 2 tablespoons honey, and 1/2 teaspoon cinnamon with a hand mixer or whisk until light and fluffy.

  9. 9

Serve the pancakes warm, topped with a dollop of the whipped honey cinnamon butter and a drizzle of maple syrup.

Notes

If the cinnamon swirl mixture is too runny, let it sit for a few minutes to thicken before piping. To prevent the sugar from burning on the pan after flipping, ensure the heat is not too high and clean the pan between batches if necessary.
