Toasted Banana Bread

Ingredients
- 4 ripe bananas (3 for mashing, 1 for topping)
- 2 eggs
- 250 g blended oats
- 100 g almond powder
- 250 g skyr or Greek yogurt
- 150 g 85% dark chocolate (chopped into pieces)
- 10 g baking powder
- flaky sea salt (a pinch, plus more for serving)
- 2 tbsp maple syrup (optional, for a sweeter touch; plus extra for drizzling)
- butter, ghee, or coconut oil (for toasting slices)
- peanut butter (for serving)

Preheat your oven to 180°C (350°F). Line a baking tin with parchment paper.

In a large bowl, mash 3 of the ripe bananas until smooth.

Add the 2 eggs and 250g of skyr or Greek yogurt to the mashed bananas and mix well.

If using, add 2 tablespoons of maple syrup to the wet mixture.

Incorporate the dry ingredients: add 250g blended oats, 100g almond powder, 10g baking powder, and a pinch of flaky sea salt. Mix again until just combined.

Fold in 150g of chopped 85% dark chocolate pieces.

Pour the batter into the prepared baking tin. Slice the remaining banana in half lengthwise and place it on top of the batter.

Bake for 30 to 45 minutes, or until a knife inserted into the center comes out clean.

Once cooled slightly, cut a thick slice of the banana bread.

Heat a little butter, ghee, or coconut oil in a pan and toast the slice for 2 minutes on each side until golden.

To serve, top the toasted slice with a spoonful of peanut butter, a pinch of flaky sea salt, and a drizzle of maple syrup.
Notes
This recipe is designed to be high protein and gluten-free. For the best results, ensure your bananas are very ripe. The toasting step at the end is highly recommended for the best texture.
