Ingredients

  • 200 g roasted red pepper (can be jarred or previously roasted)
  • 75 g walnuts (shelled)
  • 1 garlic (clove)
  • 0.5 tsp sweet or hot paprika (to taste)
  • 0.5 tsp ground cumin
  • salt (to taste)
  • 0.5 lemon juice (the juice of half a lemon (mentioned in the video and comments))
  • 2.5 tbsp extra virgin olive oil (2-3 tablespoons)
  • olives (for garnish)
  • additional walnuts (for garnish)
  • chives (for garnish)

Steps

  1. 1

In a blender or food processor, add the 200g of roasted red pepper, the 75g of walnuts, the garlic clove, the paprika, the cumin, the salt, the lemon juice, and the extra virgin olive oil.

  2. 2

Blend all the ingredients until you obtain a smooth dip with the desired texture.

  3. 3

Serve the mixture in a dish or deep bowl.

  4. 4

Spread the dip, shaping it with a spoon, and garnish with some olives, walnut pieces, and chopped chives.

Notes

Although it doesn't appear in the written list in the description, the video and comments confirm that the juice of half a lemon is added to balance the flavor. If peppers are difficult for you to digest, make sure to remove their skin thoroughly before blending.
