Ingredients
- 4 potatoes (medium, peeled and halved)
- 0.25 cup all-purpose flour (plus extra for dusting and the skillet)
- 1 tbsp butter (melted)
- 1 pinch salt
- water (as needed to cover the potatoes for boiling)
- salt (a little, for seasoning before serving)
Steps
- 1
Gather all ingredients. Peel and halve the potatoes if they are not already prepared.
- 2
Put the potatoes in a pot and add enough water to cover them. Bring to a boil over high heat.
- 3
Reduce the heat to medium-high and simmer until the centers of the potatoes are fork-tender, about 20 minutes.
- 4
Turn off the heat and drain the potatoes. Return them to the pot and let them dry completely over the remaining residual heat.
- 5
Mash the potatoes with a potato masher until smooth.
- 6
Transfer the warm mashed potatoes to a medium bowl. Add the flour, melted butter, and measured pinch of salt. Stir and mix lightly until a dough forms.
- 7
Lightly knead the dough on a well-floured surface; it will be sticky. With a floured rolling pin, flatten it into a 9-inch circle about 1/4 inch thick.
- 8
Cut the circle into quarters with a floured knife.
- 9
Sprinkle a little flour into the bottom of a skillet. Cook the farls until evenly browned, about 3 minutes per side.
- 10
Season with a little salt and serve straight away.
Notes
The flour needed may vary depending on the potatoes. Farls can be made with leftover mashed potatoes. Serve hot with a little butter and salt, or fry alongside soda bread as part of an Ulster Fry.
