Weights are estimates. Together, the ingredients weigh about 1.13 kg before cooking, which is about 565 g per serving.
Steps
In a large bowl, whisk together 300 ml buttermilk, 1 egg, 1 tbsp white vinegar, and a splash of hot sauce.
Add salt, black pepper, garlic powder, onion powder, chicken seasoning, and paprika to the buttermilk mixture and whisk until well combined.
Place the chicken breast fillets into the marinade, ensuring they are fully submerged. Cover and let marinate for at least 30 minutes (or up to several hours in the refrigerator).
In a separate shallow dish, combine 1 cup all-purpose flour and 1 cup cornstarch.
Season the dredge with salt, black pepper, chicken seasoning, garlic powder, and paprika. Mix thoroughly.
Remove a piece of chicken from the marinade and coat it thoroughly in the flour mixture. For extra crunch, dip it back into the marinade and then into the flour a second time.
Heat vegetable oil in a deep pan or fryer to 350°F (180 °C) (175°C (350 °F)). Fry the chicken pieces until golden brown and crispy, about 5-7 minutes per side, ensuring the internal temperature reaches 165°F (74 °C) (74°C (165 °F)).
While the chicken fries, prepare the Hot Honey Glaze: In a small saucepan over low heat, melt 1 tbsp butter with 1 tbsp honey and hot sauce.
Whisk in salt, black pepper, garlic powder, onion powder, brown sugar, and paprika. Simmer for 1-2 minutes until slightly thickened and glossy, then remove from heat.
Prepare the sauce by mixing mayonnaise, black pepper, garlic powder, chopped parsley, and a squeeze of lemon juice in a small bowl.
Once the chicken is cooked, brush it generously with the warm Hot Honey Glaze while still hot.
Assemble the burger by spreading the prepared sauce on toasted buns, adding the glazed crispy chicken, and topping with pickles or lettuce if desired.
Notes
For the best results, marinate the chicken for at least 2 hours to ensure it stays juicy. Double-dredging (flour-marinade-flour) is the secret to the extra-thick crispy crust seen in the video.
