Ingredients

  • 6 chicken thighs (boneless, skinless, cut into bite-sized pieces)
  • salt (a little bit, to taste)
  • 0.66 cup soy sauce
  • 0.25 cup honey (estimated from visual/context)
  • sriracha (a little bit, to taste)
  • 2 cloves garlic (minced)
  • 1 inch ginger (fresh, grated or minced)
  • 1 tbsp cornstarch
  • 1 tbsp cooking oil (for frying)
  • 1 red bell peppers (sliced)
  • 0.5 onion (sliced)
  • 2 green onions (sliced, for garnish)
  • 2 cups jasmine rice (cooked, for serving)
  • sesame seeds (for garnish)

Steps

    In a large bowl, combine the chicken thighs, a little bit of salt, 2/3 cup soy sauce, honey, a little bit of sriracha, 2 cloves of minced garlic, 1 inch of grated ginger, and about 1 tablespoon of cornstarch.

    Mix the chicken and marinade ingredients thoroughly until the chicken is well coated.

    Heat a pan over high heat until it is ripping hot, then add a little bit of oil.

    Add the chicken to the pan, but do not pour in the excess marinade sauce yet. Let the chicken sit undisturbed for a few minutes to develop a nice golden-brown color.

    Add the sliced red peppers and onion to the pan with the chicken.

    Pour the remaining marinade sauce into the pan. The sauce will deglaze the pan and begin to thicken and get sticky as it cooks.

    Add the sliced green onions at the very end and toss to combine.

    Serve the chicken and vegetables over a bed of jasmine rice and garnish with a sprinkle of sesame seeds.

Notes

This recipe is excellent for meal prep as the flavors hold up well when reheated. Ensure the pan is very hot before adding the chicken to get the best sear.
