Ingredients
- 0.5 cup Unsalted butter (Softened)
- 1 cup Granulated sugar
- 2 Large eggs (At room temperature if possible)
- 1 tsp Vanilla extract
- 0.5 cup Sour cream
- 1.5 cup All-purpose flour (Spoon and level the flour)
- 1.5 tsp Baking powder
- 0.5 tsp Salt
- 4 Fresh peaches (Peeled if desired; pitted and sliced. Reserve some slices for the top.)
- 1 tbsp Granulated sugar (For sprinkling over the peaches)
- 2 tbsp Powdered sugar (For dusting before serving)
Steps
- 1
Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper.
- 2
In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined.
- 3
In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- 4
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- 5
Add the sour cream and mix until smooth and fully incorporated. The sour cream helps keep the cake tender.
- 6
Add the dry ingredients to the wet mixture and mix just until no dry streaks remain. Do not overmix.
- 7
Fold part of the sliced peaches into the batter with a spatula, distributing them evenly without crushing them.
- 8
Transfer the batter to the prepared pan and smooth the surface. Arrange the remaining peach slices over the top, slightly overlapping if needed.
- 9
Sprinkle the tablespoon of granulated sugar evenly over the peaches.
- 10
Bake for about 50 to 60 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- 11
Let the cake cool in the pan for about 15 minutes, then remove it from the pan and transfer it to a wire rack to cool further.
- 12
Dust the cooled cake with powdered sugar, slice, and serve.
