  • kosher salt (To taste, divided between the chicken, breading, and sauce)
  • black pepper (To taste)
  • 0.5 cup all-purpose flour (For dredging the chicken)
  • 2 large eggs (Beaten for the chicken coating)
  • 1.25 cup panko breadcrumbs (For a crisp coating)
  • 0.5 cup finely grated Parmesan cheese (Mixed into the breadcrumbs)
  • 4 tbsp olive oil (For frying the cutlets and sautéing the aromatics)
  • 1 yellow onion (Finely diced)
  • 3 garlic cloves (Minced)
  • 2 tbsp tomato paste

Steps

    Place the chicken breasts between sheets of parchment or plastic wrap and pound them evenly to about 1/4 inch thick. If necessary, cut large breasts into four manageable cutlets. Season both sides with kosher salt and black pepper.

    Set up three shallow bowls: one with the flour, one with the beaten eggs, and one with the panko mixed with the grated Parmesan. Coat each chicken cutlet first in flour, shaking off the excess, then in egg, and finally in the Parmesan-panko mixture. Press the crumbs firmly onto both sides and set the breaded cutlets aside.
